Xanthan Gum is also known as XC Polymer (Xanthan gum biopolymer). It is a polysaccharide secreted by the bacteria genus XanthomonasCampestris. Xanthan Gum is an anionic polymer with tolerance for salinity and fair tolerance for hardness ions. It is a finely powdered material that can vary in the amount of residual bacteria debris and the ease with which it disperses into water. It degrade at around 200 to 250F. It fails when pH or hardness are at extreme level.
