Sorbitan trioleate is a light yellow viscous liquid at room temperature, almost insoluble in ethanol, ethyl acetate, petroleum ether and toluene, and insoluble in water. It gradually saponifies under strong acid or strong base conditions; stable in weak acid or weak base.
