Sodium hydrogen phosphate (Na2HPO4) is the sodium salt of phosphoric acid. It is a white powder that is highly hygroscopic and soluble in water. It is therefore used commercially as an anti-caking additive in flour products. It can be found commercially in both anhydrous and hydrated forms. The pH of this solution is about 8.0 and 11.0.
