Sodium erythorbate is a highly refined, white solid state chemical with a neutral odor and flavor that is used as a food additive to fix color mainly in meat, poultry and soft drinks. Sodium erythorbate is a chemical variation of ascorbic acid and vitamin C. It is used as a preservative thanks to the inhibition of oxygen in foods, it helps prevent color change, maintains and enhances the flavor in foods and prevents the formation of nitrosamines (cancer-causing compounds).
